    Sekihan (literally “red rice") is a red-bean rice dish served on celebratory occasions. Sweet (glutinous) rice and partially cooked adzuki-bean cooking liquid is used to add a red hue to the rice. As adzuki beans tend to break in half when cooking and bring up the image of hara-kiri (ritual suicide), the firmer sasage (black-eyed beans) are sometimes used as a substitute.
